Clean Arizona Sunshine bliss in a jar!

Here at Carolyn’s Classics, every jar of our Prickly Pear Jelly is a true labor of love crafted by hand in small batches to ensure the highest quality and flavor. We don’t just make jelly we tend to it! From harvest to jar, each step is guided by care, patience, and tradition.

We use only the soft, ruby-red inner pods of Arizona’s wild prickly pear cactus no tough skins, no seeds just the purest part of the fruit. Each batch is gently prepared with no industrial mills, and no rush, just shiny spoons, open pots, and the quiet magic of slow cooking.

Chef Sara Rascón, inspired by many teachers, and the soulful kitchen wisdom of Mom & Nana Maria, infuses every batch with heritage and heart. This is jam the old way before machines, before shortcuts preserved with nature’s unrefined cane sugar, free from GMOs, 100% vegan, and always gluten-free.

One taste, and you’ll know—this isn’t ordinary jelly. It’s a one-of-a-kind experience crafted with time, love, and the desert’s sweet gift!

🧀 Cheese Pairings with Prickly Pear Jelly

Prickly pear’s sweet, floral, slightly tart flavor makes it a perfect partner for these cheeses:

  • Manchego – The nutty, firm texture of this Spanish cheese balances the jelly’s delicate sweetness.

  • Goat Cheese (Chèvre) – Creamy and tangy; serve on a crostini with a dollop of jelly for an elegant bite.

  • Brie or Camembert – The mild, buttery profile of these soft cheeses lets the prickly pear flavor shine.

  • Aged Cheddar – The sharpness of the cheddar contrasts beautifully with the fruit’s gentle tartness.

🥜 PB&J Upgrade Ideas

🌵 Amazing Prickly Pear Fact

Did you know?
Prickly pear cactus is one of the only fruits that thrive in extreme desert heat while storing water in its pads. It has been a vital food, medicine, and dye source for Indigenous communities for thousands of years. Its vibrant color comes from betalains, powerful antioxidants that support inflammation reduction and cellular health.

JELLY INGREDIENTS: Arizona Prickly Pear Cactus Fruit, Sugar, Lemon, and Fruit Pectin. No Added Preservatives.

A Fun and Wild Ride
Format: Kindle
Two brothers in arms go on amazing adventures, face impossible odds, and grow in ways they never expected. Down to earth, humble, and relatable characters with a continuously evolving storyline, what more could you ask for? Cool weapons and abilities? Epic battles? Magic? Yeah, it’s got all that too. This series just became a must read on my LitRPG recommendation list.

Excellent Parallel Worlds and Xianxia Story
Format: Kindle
The story follows two affable characters, Rugrat and Eric. Rugrat is a wonderfully written redneck and Erik plays the role of an exasperated and loyal brother in arms. The two main characters interactions between each other bring interesting banter to the different parts of the story that other wise progress too slowly. It’s a cultivation novel and the main characters often take a great deal of time learning more about the system and how they can leverage its powers. The magic system in world combines well with the parallel world aspect, and the main characters thrive in their new environment. The stats, like in many other stories in this genre, serve as relatively arbitrary plot pieces that could be easily handled without the stats. The potential for growth and the magic systems interesting interactions with modern technology makes the magic satisfying to read about. My favorite aspect of the story so far is the clashing of the honorable soldier mentality with the “might makes right” philosophy of martial arts cultivation novels. Though it’s clear the author heavily favors one philosophy over the other. A great read, and an excellent novel to enjoy as an audiobook.

Xianxia-inspired novel I can actually read
Format: Kindle
I've read (or attempted to read) several wuxia/xianxia stories in the past. This is probably the best of that genre that I've tried. I know, such a titillating opening statement, but hear me out: this story is very good. NOT great, but not the typical "my eyes wish to bleed from my skull" experience, either. Most Chinese fantasy is bad. I wish that were not so, hence me trying to find good stories. In general, the stories don't make a lot of sense, and the grammar and repetitive phrasing makes the translations a generally terrible experience. Coming from a background of looking at college student papers, I've had my fill of bad grammar and poor sentence structure; I don't need more. With an English speaking author at the helm, however, this was a pleasant ride. There were a few grammatical errors but nothing to get my pants in a twist over. The story mostly makes sense, with only the two main characters occasionally speaking like locals throwing me off a bit, as well as the two of them growing so used to elements of their surroundings and quest rewards. It just felt a little unnatural in places. My biggest gripe is how they suddenly sprout knowledge of city planning and infrastructure. That really felt out of character, and came out of left field. Other than that, I think this was a solid first entry for this series.
